Through Old French from a word for a 'foot soldier' (peon, from Latin pes 'foot'). The pioneer was the infantryman sent ahead to dig and clear the ground for the army — so 'pioneer' came to mean anyone who goes first and opens the way.

Why It Means This

The foot is well hidden here. A pioneer was literally a foot soldier (someone on foot, not horseback) tasked with going ahead to prepare the way. That image of 'the one out front clearing ground' survived into modern English even as the military and the feet faded away.
