From Latin vertex (the turning point, the top — where the heavens were thought to turn), via vert (turn). Vertical originally meant 'at the vertex,' pointing straight up to that pivot overhead. Hence 'upright, perpendicular.' The business sense ('a vertical market') borrows the up-and-down stacking image.
